Echoes of a fresh walk in the Scottish Borders – piney juniper layered with notes of hawthorn, birch and fir.


There are 12 botanicals to be found in this London Dry – many grown in their own botanical gardens – perfectly blended with natural spring water straight from their source in the hills behind the Hydro. This very source has been supplying the hotel since the doors opened in 1881. In those days the water was used for hydropathic treatments. Now, we can think of no better ingredient for our gins.


History of the hotel - 1881 saw the opening of the grand Peebles Hydropathic Establishment. Set high above the town of Peebles in the stunning Scottish borders, the hotel offered a vast range of therapeutic water treatments bringing guests from all over Scotland and further afield to avail themselves with these revolutionary treatments.


The source of these water treatments? Peebles Hydro’s private water source, the Shieldgreen spring. This spring water is now at the heart of the Hydro's recently launched 1881 Gin and also waters some of the local botanicals that may end up in the distilling process.
